Easy & Earthy – Garlic Butter Steak Bites with Potatoes

On busy evenings, one pan dishes make both cooking & clean-up faster and more efficient, giving us more time to relax in the evenings. That’s a definite plus at this time of year, when the days are beginning to get longer and evenings are wonderfully comfortable for leisurely walks or lounging on the deck.

Today’s one pan dish is a delicious beef entree of steak and potatoes. The butter in this recipe helps the steak develop a rich, caramelized crust. The butter also speeds up the cooking process, and adds a deep, savory flavor to the meat. The garlic, rosemary, oregano, and seasonings add depth to both the potatoes and the steak. Rosemary has assertive woodsy notes, and oregano brings pungent and slightly bitter peppery touches. When all the elements are combined, this dinner is savory with earthy warmth and flavor!

Garlic Butter Steak Bites with Potatoes

Garlic Butter Steak Bites with Potatoes (adapted from thecookierookie.com) Total Time Required: 20 minutes, Prep Time: 10 minutes, Cook Time: 10 minutes, Yield: 4 servings

Ingredients:

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 pound Yukon Gold potatoes diced into 1/2-inch cubes
  • 4 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 1-1/2 pounds sirloin, tenderloin, or NY strip steak, cut into 1-inch cubes
  • freshly chopped parsley, for garnish

Directions:

Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter to the pan. Let the butter melt completely.

Add the cut potatoes, garlic, rosemary, oregano, salt, and pepper to the pan. Cook for approximately 4 minutes without disturbing. Stir and cook an additional 3-4 minutes, or until the potatoes are fork tender.

Add the potatoes, herbs, and seasonings to the pan.

Remove the potatoes from the pan and set them aside in a bowl.

Once the potatoes are done remove them from the pan.

Return the skillet to the stove and increase the heat to high. Season the cubed beef with salt and pepper. Add the remaining 2 tablespoons of butter and stir to melt it. Add the steak bites in a single layer and cook for 1 minute. Flip or stir the steak for another 1-2 minutes or until the pieces reach the desired doneness. Remove the skillet from the heat.

Cook the meat in additional butter and seasonings.

Add the cooked potatoes back to the skillet and toss the steak and potatoes together. Add additional salt and pepper if desired.

Add the potatoes back to the skillet and toss them with the beef.

Transfer the meat and potatoes to a serving dish.

Transfer the beef & potatoes to a serving dish and garnish with parsley.

Top with fresh chopped parsley and serve.
