Moms Deserve Gold! – Golden Mimosa Cocktail

Being a mother is a rewarding, yet sometimes hard, lifetime commitment. Moms deserve a special day of indulgences and love. And this is the weekend to do that!

Being a mimosa fan (especially for brunch and Mother’s Day events!), I wanted to feature a new take on the standard sparkling wine cocktail for this post. This version of a mimosa gets it rich, golden-orange color from a mix of orange juice and apricot nectar.

Apricot nectar is made from pureed apricots. Water and sugar are added to the puree to balance out the thickness and acidity of the pureed fruit, and to make the nectar more drinkable. Here, the apricot nectar adds a sweet-tangy flavor and vibrant color to this mimosa!

Golden Mimosa Cocktail

Golden Mimosa Cocktail (adapted from eatingwell.com) Total Time Required: 15 minutes

Makes: 15-20 servings

Ingredients:

  • 2-1/4 cups (18 ounces) orange juice, chilled
  • 3-3/4 cups (30 ounces) apricot nectar, chilled
  • 1 (750 milliliter) bottle Champagne, sparkling white wine or sparkling water, chilled
  • slices of orange, lemon, and/or lime for serving

Directions:

Combine the orange juice and apricot nectar in a large (11-cups or more) glass pitcher or punch bowl. Add Champagne (or wine or sparkling water) and stir gently. Serve immediately over ice with slices of fruit.

Just mix it all together and serve over ice with a garnish!
