Trending – Everything Bagel Seasoning Chicken Sandwich

Trends aren’t something I usually pay attention to, unless it has something to do with food, of course! And something that is still trending is Everything Bagel Seasoning. I’ve posted a dip and a chicken dish using the spice blend, and we love it on salmon (a future post). The Everything Bagel deviled eggs are still in the developmental stage, but I have high hopes for that recipe, too. I don’t think I am quite ready for Everything Bagel Ice Cream yet, although it is on the market. My recipe for today uses this trending seasoning in the coating for chicken sandwiches.

Everything Bagel seasoning mix is made up of two kinds of seeds, dried minced garlic and onion, along with some salt. The mixture is quickly put together at home or readily available at supermarkets. Poppy seeds are one of the ingredients making up the spice blend. They are the tiny dried seed of the opium poppy. But there is no need to worry. The fluid in the poppy flower bud that is made into the narcotic opium is no longer present when the seeds are fully formed, so poppy seeds do not have narcotic properties. These seeds complement many lemon flavored baked goods and are a great addition to numerous dishes, as well as being an integral part of Everything Bagel Seasoning!

Note on the recipe procedure: baking the breaded chicken on a rack allows the bottom to become crispier than it otherwise would. A broiler pan with a rack can be used in place of a rack in a baking pan.

Everything Bagel Seasoning Chicken Sandwich

Everything Bagel Seasoning Chicken Sandwich (inspired by a recipe from tasteofhome.com) Total Time Required: 30 minutes, Makes: 5 sandwiches

Ingredients:

  • 2 tablespoons Everything Bagel seasoning
  • 3/4 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup butter, cubed
  • 1-1/4 pounds chicken breasts
  • 1/2 teaspoon salt
  • rolls, cheese, lettuce, tomato slices, avocado slices, mayo, and mustard for serving if desired

Directions:

Preheat the oven to 425°. Pound the chicken breasts to 3/4 – 1″ thick and cut into 5 roll-sized pieces.

Pound the chicken to about an 1″ thickness.

Combine the Everything Bagel seasoning, bread crumbs, and Parmesan cheese in a small bowl, mixing well.

Combine the bread crumbs with the seasoning and cheese.

In a microwave-safe shallow bowl, microwave the butter until it is melted. Sprinkle the chicken with the salt. Dip the chicken pieces in the warm butter.

Dip the chicken in the melted butter.

Coat each piece with the bread crumb mixture, patting the breading to help it adhere.

Coat the chicken in the bread crumb mixture.

Place the pieces on a rack in a roasting pan or baking sheet or on a broiler pan with a rack.

Placing the chicken on a rack over the pan makes for crispier chicken pieces.

Bake the chicken until the breading is golden brown and the chicken reaches an internal temperature of 165ºF about, 15-17 minutes.

The chicken is ready!

Serve the chicken on a roll with the desired veggies and condiments.
