Labor Day Weekend – Emily’s Hummus Dip

Well, we all missed many things that we love about 2 seasons now, and we are heading into Fall with the Labor Day holiday this weekend. But humans are adaptable creatures and we are making the best of the pandemic situation and figuring out how to live with the current circumstances of our lives.

With the Summer growing season coming to a close, I wanted to share this recipe using the produce that is still inexpensive, delicious, and abundant right now, but will not be for much longer. Specifically, tomatoes, cucumbers, and red bell peppers. Combining them with red onion, olives, & dill and spreading it all over some hummus then topping it some feta cheese makes for a fresh and simple Greek-inspired appetizer. It is perfect for end-of-Summer (and many other!) celebrations.

Emily’s Hummus Dip

Emily’s Hummus Dip (adapted from an original recipe created by Emily B) Time Required: 20 minutes, Serves: 6-10

Ingredients:

  • 1 English cucumber
  • 3 plum tomatoes
  • 1 small red onion
  • 1 red bell pepper
  •  1/2 cup Kalamato olives
  • 2 tablespoons lemon juice
  • 1 tablespoon dill, chopped
  • 2 cups hummus
  • 1/2 cup feta cheese
  • pita chips for serving

Instructions:

Seed & chop the cucumber, tomatoes, and bell pepper. Chop the red onion & olives.

Chop the cucumber, tomatoes, red onion, pepper, & olives.

Combine the cucumber, tomatoes, onion, pepper, and olives with the lemon juice and dill.

Add the lemon juice & dill to the veggies.

Toss gently, but thoroughly.

Toss it all together gently.

Spread the hummus out on a serving platter.

Layer the hummus on a platter.

Top the hummus with the chopped veggie mixture. Sprinkle the platter with feta cheese.

Sprinkle the feta over the veggies.

Serve immediately with pita chips.
