Summer Solstice, Part 2 – Fresh Salsa

Stonehenge also aligns with the sun on the solstice. Not much is known about the culture that built Stonehenge, but it’s alignment with both the Winter and Summer solstices suggest that the solstice contained some sort of mystical or religious significance, tying it in with Stonehenge’s history as a burial ground.

Our culture does not revere the Summer Solstice as former societies did. But being the homegrown enthusiast that I am, I am celebrating this annual event by preparing fresh food featuring some of my favorite bounties of Summer. This fresh salsa is sooo much better than anything bought in the grocery store!

Ingredients:

  • 2 pounds (about 3 ½ cups) chopped fresh tomatoes
  • 2 fresh jalapeno peppers, chopped
  • ½ onion chopped
  • 1 teaspoon minced garlic
  • ½ teaspoon salt, plus more to taste
  • 1 teaspoon honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 bunch fresh cilantro stems included
  • tortilla chips for serving

Instructions:

Place all the ingredients in a food processor in the order listed. Pulse the processor a couple of times to chop up the larger chunks, and then puree the mixture until the salsa reaches the desired texture. Taste the salsa and season it with additional salt or honey, as desired.

Process the ingredient to the desired consistency.

Serve immediately with tortilla chips or cover and refrigerate the salsa for several hours to allow the flavors to blend.

This is easy to make and way better than the jarred salsa from the store!
