Thanksgiving Vegetable – Creamed Spinach with Mushrooms

Traditionally, we serve some form of Brussels sprouts as the green vegetable dish at Thanksgiving. Eric comes from a long line of Brussels sprout eaters and the cruciferous veggie was always served as part of their feast. I, on the other hand, did not grow up eating Brussels sprouts and in fact, had never eaten them before dating Eric. Due to the frequency with which we prepare them, I have come to not only accept them as a side dish with dinner, but also to somewhat enjoy eating them. But the same cannot be said of one of our children.

With that in mind, instead of posting a Brussels sprouts recipe right before Thanksgiving, this post of the green vegetable side dish for the feast features spinach. Once again, creamed spinach is not something I ate growing up, but Eric & his family did. Eric often ordered the creamed spinach as one of his side dishes with his chicken at Boston Market. It wasn’t something we made at home, though. Until recently. I experimented with a few different versions and this is the recipe we both liked. I hope the kids agree when we serve it at Thanksgiving!

Creamed Spinach with Mushrooms

Creamed Spinach with Mushrooms (adapted from tasteofhome.com)  Makes: 4 servings, Time Required: 20 minutes.

Ingredients:

  • 1/2 pound sliced fresh mushrooms
  • 1 small onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 9 ounces fresh baby spinach
  • 4 ounces cream cheese, cubed and softened
  • 1/2 cup shredded Parmesan cheese

Directions:

In a large skillet, saute the mushrooms and onion in the butter and oil until they are tender. Add the garlic, salt, and pepper and cook 1 minute longer.

Saute the mushrooms and onions.

Add the spinach and cream cheese to the pan. Cook and stir them into the other ingredients until the cream cheese is smooth and the spinach is wilted.

Add the spinach & cream cheese to the pan.

Transfer the mixture to a serving bowl, sprinkle it with the Parmesan cheese and serve.

This dish fits right in with our Thanksgiving feast!
