Not Fish Fry Friday! Parmesan Crusted Tilapia

My working title for this post was “Fish Fry Friday”. But today is not Friday, and this dish isn’t fried. But tilapia is fish, so I was spot on for one out of three!

I’m trying to incorporate more fish into our diet. We really enjoy salmon, tuna & swordfish, but sometimes a lighter fish is necessary. Like when we’re cooking indoors and we want to avoid having a lingering fishy smell throughout the house. This dish turned out even better than I thought it would. I enjoy bold flavors in foods and white fish can sometimes be too bland for my tastes. The Parmesan cheese & Italian seasonings in the bread crumbs added great flavor to the mild taste of the tilapia.

The original recipe called for Italian style bread crumbs. I prefer to buy plain bread crumbs and add our own seasonings to it. That allows us more versatility in flavoring whatever we make with the bread crumbs. If you want to use Italian style crumbs in this dish, omit the basil & oregano in the ingredients.

Parmesan Crusted Tilapia (adapted betterrecipes.com) Makes 2 servings

Ingredients:

  • 2 fillets tilapia
  • 1/3 cup all-purpose flour
  • 1/2 cup bread crumbs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 egg
  • 3 tablespoons Parmesan cheese, grated

Directions:

Preheat the oven to 425°. Beat the egg in a shallow bowl. In another bowl mix the bread crumbs with the basil, oregano, and Parmesan cheese. Add 1/4 to 1/2 teaspoon each of salt & pepper to the flour.

Dredge the tilapia fillets in the seasoned flour.

Spray a baking sheet with nonstick spray.

Place the tilapia on the baking sheet and bake them for 10-12 minutes. Serve them immediately with a side vegetable.
