Horseradish is another one of those perennial vegetables. I tried growing it from the bare root last year after having read about how easy it is to grow. Apparently, it’s not all that easy! The root I got from the home center never grew. Big disappointment. I wanted to give it another try since we are such big horseradish fans, so this year I bought a plant that is already growing from a nursery. I made a special trip back to the nursery just to get the horseradish and waited in an impossibly long line just for that one plant! I’m hoping that will do the trick and that I get some usable root to eat & some to replant. Fresh horseradish is wonderful! If you like that sort of thing. We may be in the minority on that front.
We’ve been making salmon this way for a while and it is probably my favorite way to eat it. Friends always used to ask me where Eric was taking me for dinner on my birthday. I always replied that we were staying home and Eric was making me Horseradish Crusted Salmon. Most of my friends thought I was nuts. The truth is, I prefer Eric’s cooking to going out. He makes such wonderful meals and has since we got together 32 years ago. I always say he can cook for me any time. And he does!
Horseradish Crusted Salmon (adapted from The Food Network)
Prep time: 10 min Cook time: 10 min Yield: 2 servings
Ingredients
- 2 6 ounce salmon filets
- 2 tablespoons light mayonnaise
- 2 tablespoons horseradish
- 1 tablespoon yellow mustard
- 1 cup fresh bread crumbs
- Salt
- Pepper
- 1 tablespoon olive oil
- chives for garnish if desired
Directions:
Check that all the bones have been removed from the fish. In a small bowl, combine the breadcrumbs with the mayonnaise, horseradish and mustard and combine well. Chop & add the chives if desired.
Lay the salmon out with the skin side down. Season the top with salt & pepper then mound the breadcrumb mixture on, pressing down to cover the top side of the fish.
Cook the salmon on the grill at a medium setting for 4-6 minutes per each 1/2 inch of thickness, until it is cooked all the way through. Serve immediately with a green vegetable or salad.

Never heard of horseradish salmon bit it sounds interesting! I love salmon and will give it a try! Tx!
