Quick Pizza: Radish & Whipped Feta Flatbreads

It is Friday, therefore it is Pizza Night at our house. But with the mercury close to the top of the thermometer, the amount of effort I want to spend on putting dinner together has greatly decreased, along with my energy level. I still want great tasting, fresh food that we put together at home, though. The solution for all these conditions is a flatbread pizza. It makes for a lighter meal when we pair it with a salad. Or it could be a quick & easy appetizer when we have friends over for dinner. Using pre-baked naan or flatbreads takes most of the work out of the preparation. Then it’s just a matter of slicing up the produce & whipping some cheeses together to layer on the warmed breads. Simple, quick & deliciously fresh-tasting. That’s the start to a great weekend!

Radish & Whipped Feta Flatbreads

Radish & Whipped Feta Flatbreads (adapted from tastyseasons.com)  Prep time: 25 minutes, Cook time: 5 minutes,  Total time: 30 minutes. Servings: 4 flatbreads – serves 6 – 8 as an appetizer or 2 – 4 as a light dinner with salad

  • 8 ounces feta cheese, room temperature
  • 3 ounces cream cheese, room temperature
  • 1 large or 2 small garlic cloves, peeled
  • 3 scallions, 1 finely chopped and 2 thinly sliced
  • 4 4-ounce pre-baked naan or flatbreads
  • 12 ounces radishes. trimmed & thinly sliced

Instructions:

Combine the feta cheese, cream cheese, scallions and garlic in the food processor and process the ingredients until they are smooth and creamy. Transfer the mixture to a medium bowl and set the whipped feta mixture aside.

Process the feta with the scallions and garlic.

Preheat the oven to 400°F. When the oven is up to temperature, place the naan or flatbreads on a baking sheet and place them in the oven for 2 – 3 minutes for a soft bread, up to 5 – 6 minutes for a crispier bread. If making them crispy, keep an eye on them so they don’t burn.

After the flatbreads are baked, divide the whipped feta evenly between the flatbreads, about 1/4 cup of spread on each.

Spread the cheese over each one, layer the radish slices on top of the cheese mixture then sprinkle the sliced scallion on last. Cut the flatbreads in halves or quarters and serve immediately.
