Basil & Balsamic – Bunk’s Tuna Salad

Typically, our weekend lunches are lighter fare when it is just Eric & I. During the colder months, our preference leans towards soup, but in the warmer months, we’re Team Tuna Salad!

I’ve posted a number of tuna salad variations over the past few years, all of which we have enjoyed numerous times. And every Summer, I look for a new and innovative recipe for our lunches. We opt for ones without mayo, as mayo and hot temps don’t mix real well.

I had almost given up hope of discovering a new version for this Summer. Then I found one that has become our new favorite! This recipe, featuring fresh basil and balsamic vinegar originated at Bunk Sandwiches in Portland, OR. While I have been to Portland a few times, I haven’t been to Bunk’s. We’ll have to check the place out next time we are in the vicinity. For now, we’re enjoying this adaptation of their tuna salad sandwich.

Bunk’s Tuna Salad

Bunk’s Tuna Salad (adapted from Bunk’s Sandwiches in Portland, OR via sunset.com) Total Time Required: 15 mins, Makes: about 1 cup of salad, 2 servings

Ingredients:

  • 5 ounces albacore tuna
  • 2 tablespoons minced red onion
  • 2 tablespoons extra-virgin olive oil
  • 1/2 tablespoon balsamic vinegar
  • 1/2 tablespoon minced fresh basil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

Combine the tuna, onion, olive oil, balsamic vinegar, basil, pepper flakes, salt & pepper in a medium bowl.

Combine the ingredients in a medium bowl.

Mix well.

Mix everything together well.

Serve the tuna salad with crackers or on rolls with cheese, condiments, and lettuce, as desired.

Serve as a sandwich with fixin’s or on crackers.
