Essential Berries – Strawberry & Goat Cheese Crostini

Today is Star Wars Day (May the Fourth be with you!) but my sights are already set on this coming weekend and Mother’s Day. There are a few things I insist upon for this holiday. I get to plant something (flowers, herbs, or a garden are most preferable), I get time with Eric, Andrew, Kelly & Gilbert, and strawberries play a starring role in something I eat. Eric and the kids have always been very indulgent on Mother’s Day and I usually get all of this and more!

Since this is a food blog, the food portion of my preferred Mother’s Day celebration will be the focus here. Strawberries are always included on this holiday because they signal Spring and the beginning of better weather to me. (Did you notice that the May header picture on whygoouttoeat.com is a wild strawberry plant?!) Strawberries are the one perennial fruit that I have grown in every garden I’ve had. Nothing tastes sweeter than fruit that is ripened on the vine/bush/tree, then picked and eaten shortly thereafter. It’s a little early for the local berries to be ready in our area, but I still hope to be enjoying strawberries on Mother’s Day this year!

Strawberry & Goat Cheese Crostini

Strawberry & Goat Cheese Crostini (adapted from reluctantentertainer.com) Total Time Required: 20 minutes, Prep Time: 15 minutes, Cook Time: 1 minute, Makes: 8 servings

Ingredients:

  • 1 French baguette, cut into 1/4” thick slices
  • olive oil
  • 2 ounces goat cheese
  • 2 ounces cream cheese, softened
  • 10-16 fresh strawberries, hulled & sliced
  • 3 tablespoons balsamic glaze
  • 1/3 cup mint leaves, chopped

Instructions:

Preheat the oven to BROIL. Lay the slices of bread on a baking sheet and drizzle them with olive oil. Watching carefully, broil the bread for about 30 seconds on each side, until they are toasted and brown.

Broil the bread slices just until lightly browned.

Combine the cheeses in a small bowl and mix them together well. Spread the toasted baguette slices with the cheese mixture.

Combine the cheeses and spread the mixture over the toasted bread slices.

Top each slice with strawberries, pressing the strawberries into the cheese. Drizzle some balsamic glaze over each piece and garnish them with the mint to serve.

Sweet with a bit of tang is a wonderful combination!
