I have often wondered why bunnies & carrots are associated with Easter and eggs. Bunnies don’t lay eggs and even though rabbits supposedly like to eat carrots, those orange root vegetables are a fall crop and not typically a food choice for actual rabbits. So, what’s the connection?
After doing a bit of internet research, I learned that the Easter bunny was a tradition brought to America in the 1700s with German immigrants. The Christian holiday of Easter celebrating the resurrection of Jesus became superimposed on pagan traditions that celebrated the rebirth and fertility of Spring. Rabbits are a symbol of fertility. And carrots are a sweet treat for rabbits. So, cute bunnies and colorful carrots are part of many current Easter celebrations.
This Easter, carrots will be part of the celebration in the form of juice added to sparkling wine. Carrot juice is a vibrant addition to the traditional orange juice mimosa and perfect for the Easter breakfast or brunch menu.
Carrot & Orange Mimosa (adapted from a recipe by Bobby Flay via foodnetwork.com)
Total Time Required: 5 minutes, Yield: 4 to 6 servings
Ingredients:
- 1-1/2 cups carrot juice
- 1-1/2 cups orange juice
- juice of 1 lime
- 750ml bottle sparkling wine, chilled
- lime wedges for serving
Directions:
Combine the carrot and orange juices with the lime juice in a pitcher.
Fill flutes or glasses halfway with the juice and top with the sparkling wine.
Garnish with the lime wedges and serve.
