Grilling Season! – Hot Honey Feta Chicken Skewers

Last week, I wanted to try this grilled chicken dish. Eric & I both looked over the recipe and thought it would be something we could easily make and would enjoy. It was the perfect evening for grilling and then enjoying an al fresco dinner. Eric picked up the bell pepper and white onion that we needed for the recipe on his way home from the gym that morning. What we did not realize until preparing to make the recipe that evening was that the ‘honey’ listed in the ingredient list should have read ‘hot honey’.

Being the DIY foodies that we are, instead of running back to the grocery store, we went online to look for a recipe to make some hot honey. With minimal effort, we found a recipe to make the popular condiment using ingredients we had on hand. It was quickly prepared, and we were enjoying this combination of chunks of chicken breasts, onions, and green peppers grilled on skewers, then drizzled with hot honey and finished with some crumbled feta cheese. Delicious and perfect for an evening of outdoor dining!

Hot Honey Feta Chicken Skewers

Hot Honey Feta Chicken Skewers (adapted from allrecipes.com)  Total Time Required: 35 minutes, Prep Time: 20 minutes, Cook Time: 15 minutes, Makes: 6 – 8 servings

Ingredients:

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 pounds skinless, boneless chicken breasts, cut into 1-inch cubes
  • 2 green bell peppers, cut into 2-inch pieces
  • 1/2 white onion, cut into 2-inch pieces
  • 8 large metal skewers
  • 1/4 cup hot honey, plus more for serving
  • 1/2 cup crumbled feta

Directions:

Preheat an outdoor grill to medium-high heat. Lightly coat the grate with cooking spray.

Mix together the garlic, 1 tablespoon of the olive oil, and the salt and pepper in a small bowl. Toss the chicken cubes in the mixture until they are well coated.

Toss the chicken with some olive oil, salt, and pepper.

In a separate bowl, toss the green peppers and onions with the remaining olive oil.

Toss the pepper and onion with olive oil.

Thread the chicken, green bell peppers, and onions onto the skewers.

Thread the chicken, pepper, and onion pieces onto the skewers.

Grill the skewers until the chicken is no longer pink at the center and the juices run clear, turning the skewers every few minutes, for 15 to 20 minutes, until an instant-read thermometer inserted near the center of a piece of chicken reads 165ºF. Baste the skewers with hot honey during the last 5 minutes until lightly charred, if desired.

Grill the skewers until the chicken reaches an internal temperature of 165ºF.

Remove the meat and veggies from the skewers and place them in a serving bowl. Add the feta to the bowl and toss.

Add the feta to the chicken & veggie mixture.

Serve the chicken and veggies warm with additional hot honey.
