More than just hot sauce mixed with honey, hot honey is the flavorful mix of heat and sweet that is gaining in popularity all across the country and popping up everywhere. Inspired by the chili pepper infused honey available in Brazil, Mike Kurtz, founder of Mike’s Hot Honey, developed his own version of the condiment and went from making it for friends and family to producing the leading brand of hot honey in the country.
Our first encounter with the spicy & sweet combination was on a pizza at our favorite local wood-fired pizzeria. Called the Buzzkill, it features chili peppers, pepperoni, and honey. On a subsequent visit to the restaurant, Eric indulged in the hot honey chicken and waffles. Enthralled with both dishes, we started looking for recipes to make at home. We now have a number of dishes featuring the sweet with heat combination to experiment with. But the first step is to make some hot honey!

Hot Honey
Hot Honey (adapted from allrecipes.com) Total Time Required: 40 minutes, Prep Time: 5 minutes, Cook Time: 5 minutes, Cooling Time: 30 minutes, Servings: 4
Yield: 1/2 cup
Ingredients:
- 1/2 cup honey
- 2 tablespoons red wine vinegar
- 2 teaspoons red pepper flakes
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
Directions:
Combine the honey, vinegar, red pepper flakes, thyme, smoked paprika, and salt in a small saucepan. Bring the mixture to a boil.

Combine the honey with the spices and seasonings and bring to a boil.
Remove the pot from the heat and let the mixture cool to room temperature to infuse the flavors, about 30 minutes. Strain out the solids if desired. Store the honey at room temperature in an airtight container.

Serve over roasted meats or vegetables.
