On the Go Season! – Hummus Tuna Salad

Now that warm weather season seems to have arrived for duration, we’re switching from light weekend lunches of soup to something a bit more substantial. Our lifestyle is more active and on the go when the weather is conducive to outdoor activities. To that end, we keep a supply of canned tuna fish on hand for the times when we are seeking a quick meal that will provide more protein for an afternoon packed with adventure.

However, when warm Summer temperatures arrive, I limit making and serving mayonnaise-based foods to avoid spoilage of the dish. This Summer, when we want to enjoy tuna salad for lunch, we’ll be making the salad with a mixture of hummus and Dijon mustard instead of the traditional mayo. Red onion, bell pepper, tomatoes, and sweet relish will also be part of the combination, rounding out the flavor profile nicely.

This tuna salad makes a great packable sandwich. It will also be a comforting and warming melt when the Summer storms hit. And a light snack served with some crackers when we need a little something to hold us over until dinner. Versatile, quick, and delicious are the essential qualities we strive for when the days are longer and the weather is nice. Hummus Tuna Salad is all of that and more!

Hummus Tuna Salad

Hummus Tuna Salad (adapted from allrecipes.com) Total Time Required: 15 minutes, Makes: 4 servings

Ingredients:

  • 10 – 12 ounces canned tuna fish, drained
  • 1/2 cup hummus
  • 1/2 cup chopped red onion
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sweet relish
  • 1/4 cup chopped tomatoes
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon ground black pepper
  • lettuce, sliced cheese, bread or crackers for serving

Directions:

Add the tuna fish with the hummus, onion, pepper, relish, tomatoes, Dijon, and black pepper to a large bowl.

Add the tuna, hummus, relish, mustard, and vegetables, and seasoning to a large bowl.

Mix until well combined.

Mix well.

Spread the tuna mixture onto slices of bread, adding cheese and lettuce if desired.

Add the tuna salad to slices of bread.

The tuna salad can also be served as a melt with cheese on toasted bread, or with crackers.
