A Toast to Moms! – Blood Orange & Pineapple Mimosa

After reading through a number of cocktails to make for Mother’s Day, I had it narrowed down to two options that I wanted to try. I went with this particular libation because of my recent infatuation with blood orange juice, one of the ingredients in this drink.

The vibrant purple color of the flesh and juice of blood oranges is very striking. These oranges have a sweeter and more intense flavor than other oranges. In this recipe, the floral tart taste of blood oranges combines well with the sweet and tangy tropical flavor of the pineapple juice. A touch of orange liqueur and some Champagne complete this beautiful and delicious version of a mimosa, perfect for Mother’s Day celebrations.

(If you cannot find blood oranges to juice for this cocktail, San Pellegrino Aranciata Rossa, a sparkling orange and blood orange juice beverage, can be used as a substituted. The cocktails will be a pretty rosy pink color and a touch less sweet than those made with fresh squeezed blood orange juice.)

Blood Orange & Pineapple Mimosa

Total Time Required: 15 minutes, Prep Time: 15 minutes, Yield: 2 servings

Ingredients:

  • 12 ounces brut Champagne
  • 1/4 cup pineapple juice
  • 3 – 4 blood oranges
  • 2 tablespoons orange liqueur

Directions:

Squeeze the blood oranges to get 1/4 cup of juice. Combine the pineapple and blood orange juices, then add the orange liqueur to the juices. Divide the juice mixture between 2 flutes. Add 4 – 6 ounces of Champagne to both glasses.

Combine the juices and distribute it to both glasses.

Garnish with orange segments, strawberries, or raspberries, if desired. Serve immediately.
