Spiralizer Fun! Spiralized Peppers, Onions & Potatoes with Sausage

Recently, we’ve been experimenting with our spiralizer in a few new ways. We’ve gone beyond the basic noodle blade and tried out some other veggies. In the past, we have spiralized sweet potatoes, (Thai Shrimp Stir-Fry with Spiralized Sweet Potato Noodles) zucchini, (Chicken Piccata with Zoodles) and beets (Spiralized Beet Noodles with Whipped Feta). But we had only used one of the three blades provided with the tool. It was time to do more.

For this recipe, we were cutting both bell peppers and an onion with the ribbon blade (Blade A) and spiralizing some potatoes with the shredder blade (Blade D). The spiralizer worked beautifully on all the veggies and the meal was delicious. The friends that came to dinner the night we tried this dish also enjoyed it. I suspect their spiralizer will be getting more use in the near future, too!

Spiralized Peppers, Onions, & Potatoes with Sausage

Spiralized Peppers, Onions & Potatoes with Sausage (adapted from inspiralized.com) Serves 4 – 6, Prep Time: 30 minutes, Cook Time: 35 minutes,  Total Time: 1 hour, 5 minutes

Ingredients:

  • 1 pound sweet Italian sausage, bulk or removed from casings
  • 2 tablespoons extra virgin olive oil
  • 2 red bell peppers
  • 1 large sweet white or red onion
  • 1 1/2 – 2 pounds russet potatoes, peeled
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 garlic cloves, minced
  • salt and pepper, to taste
  • additional red pepper flakes, if desired

Instructions:

Spiralize the red peppers and the onion with the ribbon blade (Blade A). Spiralize the potato with the noodle or shredder blade (Blade D).

Spiralize the red pepper with the ribbon blade.

Spiralize the sweet onion with the ribbon blade.

Spiralize the potatoes with the noodle or shredder blade.

Place the sausage in a large, high-sided skillet and cook it until it is browned and cooked through. Remove the sausage from the pan and set it aside.

Brown the sausage in a large skillet.

Heat the oil in the skillet over medium-high heat. Once the oil is shimmering, add in the peppers, onions, and potatoes.

Heat the oil in the skillet and cook the veggies.

Season the vegetables with the red pepper flakes, oregano, basil, and garlic. Season them generously with salt and pepper and toss everything well to combine it thoroughly.

Add the seasonings to the veggies.

Cover the skillet with a lid and cook the mixture until the potatoes are cooked through, about 10 minutes. Add the sausage back into the skillet when the veggies are thoroughly cooked.

Add the sausage back into the skillet.

Serve with additional red pepper flakes for extra spice.
