Waffled Potatoes! Parmesan Tater Waffles

We owned a waffle iron for a long time. Eric & I don’t really remember when or the circumstances of getting it. I thought it had been a shower or wedding gift back in our early years together. Eric thought I had given it to him for Christmas or a birthday when the kids were little. Regardless of when it arrived in our possession, we moved it numerous times, from house to house and state to state, but rarely used it. Then I found this recipe and started using that waffle iron at least weekly! Until it stopped working. I was close to devastated. I have always been a big fan of Tater Tots & their knock-offs, Tater Bites. And I adored this cheesy waffle side dish made with them.

Fortunately, I only had to live without my new favorite kitchen gadget and this way to prepare potatoes for a short time. My kids got me a new waffle iron for my birthday and the tater waffles are back in the weekly side dish rotation!

Parmesan Tater Waffles

Parmesan Tater Waffles (adapted from thejudylab.com via delish.com)

Time Required: 35 minutes, Serves: 4

Ingredients:

  • 1 pound frozen Tater Bites
  • 1 cup freshly grated Parmesan

 

 

Directions:

Preheat the oven to 425°F. On a rimmed sheet pan, spread out the tater bites. Bake them for 20 minutes.

Preheat the waffle iron. Transfer the tater bites to a bowl and mash them together with the Parmesan cheese.

Mash the tater bites with the Parmesan.

Add half the mixture to the waffle iron, distributing it evenly, and cook it until it is crispy, about 3 to 5 minutes.

Transfer the mixture to the waffle iron.

Remove the waffle from the iron and repeat the process with the remaining potato-cheese mixture.

Cook the waffle until it is golden brown.

Cut the waffles into quarters and serve.
