The Pleasure of Apples! Apple Cheddar Scones

Apples are one of the simple pleasures of late Summer and early Fall. Apple picking at a local orchard was always the first field trip our kids went on at the beginning of the school year while in preschool and the earlier grades of elementary school. And I have to say, that school outing was probably my favorite. The sweet scents of the apples (and cinnamon!) filled the air. Plus, I love the Fall season with the cooler, less humid weather and the wonderful Autumn colors. Even after the kids stopped having these excursions with school, we would go apple picking as a family. And then would come the baking!

Cakes, pies, and Nana Serfas’ applesauce were popular uses for all those apples we picked. Once I started writing the blog though, I needed more than basic apple recipes to post during the harvest season. Hence the 40+ recipes using apples or apple products on Why Go Out to Eat, covering the entire scope of culinary applications. My first offering for the 2019 Apple Season is a savory scone recipe. Enjoy!

Apple Cheddar Scones

Apple Cheddar Scones (adapted from tasteofhome.com) Total Time Required: 30 minutes, Makes 8 scones

Ingredients:

  • 1-3/4 cups flour
  • 2 tablespoons sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup cold butter, cubed
  • 3/4 – 1 cup buttermilk
  • 1 cup shredded cheddar cheese
  • 1 cup peeled, diced apples

Directions:

In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda. Cut in the butter until the mixture resembles coarse crumbs. Starting with 3/4 cups of buttermilk, stir it in, just until moistened. Add more buttermilk, one tablespoon at a time, just until the dough holds together. Gently fold in the apples and cheese.

Add the apples to the mixed dough.

Mix in the cheese.

Turn the dough out onto a floured surface, and knead it 10 times. Pat the dough into a 9-inch circle. Cut the circle into eight wedges. Separate the wedges and place them on a Silpat mat or a greased baking sheet.

Pat the dough into a circle and cut it into 8 wedges.

Bake the scones at 450°F for 12-15 minutes or until they are golden brown. Serve warm as is, or with butter, or apple butter.
