Super Bowl LVII Part 2: Kansas City Chiefs Edition – Barbecued Pork Sloppy Joes

The Kansas City Chiefs are in the Super Bowl for the 5th time this year, making it their 3rd Super Bowl in the past four years. Chiefs quarterback, Patrick Mahomes is hoping to be the first player since 1999 to win both the MVP award and the Super Bowl in the same year. Mahomes lead the league in passing yards with over 5,000 to his credit. He threw 41 touchdowns, as well as rushing for 354 yards and making 4 touchdowns himself. The Chiefs finished their year as the NFL’s best offense, leading the league in both yards and points. Super Bowl LVII promises to be a good competition between two well rounded and evenly matched teams.

For their 4th Bowl game in 2021, I featured a ground meat, cabbage, and onion filled yeast roll called a German Bierock for Chiefs fans. It is a common food item in the Kansas City area, but BBQ is KC’s claim to fame. For this Super Bowl appearance, I’m sharing some BBQ pork sloppy joe sliders for Chiefs fans. Enjoy!

BBQ Pork Sloppy Joes

Barbecued Pork Sloppy Joes (adapted from The Kansas City Barbeque Society Cookbook) Total Time Required: 30 minutes, Makes: 6 sandwiches or 12 sliders

Ingredients:

  • 2 tablespoons olive oil
  • 1-1/2 pounds ground pork
  • 1/2 cup minced green bell pepper
  • 1/2 cup ketchup
  • 1/4 up packed brown sugar
  • 1 tablespoon minced onion
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon prepared mustard
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground ginger
  • 6 burger rolls or 12 slider rolls

Directions:

In a small bowl, combine the ketchup, brown sugar, Worcestershire sauce, mustard, seasoned salt, and ginger. Whisk it all together to blend. Set the sauce aside.

Mix up the BBQ sauce.

Heat the oil in a skillet over medium heat. Add the pork and sauté the meat until it is soft, but not browned. Drain off the fat.

Gently cook the pork to soften it.

In a large bowl, combine the pork with the green pepper, onion, and sauce.

Combine the pork with the vegetables and sauce.

Return the mixture to the skillet set over medium heat and cook until the pork is cooked through, about 10 minutes.

Cook until the pork is cooked all the way through.

Serve the pork on burger or slider rolls.

Serve on rolls.
