Pre-Game Planning – Lime Chicken Tacos

If you’re hosting a Super Bowl party this year, your plans are probably already well under way, now that the teams playing in the big game have been decided. Some people go all out for one of the teams, featuring that team’s colors, mascot, and emblem in the tableware and decorations. Others keep it more neutral, either by having both teams represented in the partyware or by going with universally compatible football themed items. When all of these preparations are taken care of, it is time to plan out the menu. Naturally, I have a suggestion along those lines!

Tacos are always a great idea for group gatherings, and especially when football fanatics congregate. My go-to choice is chicken tacos. This crock pot version allows you to do most of the prep work for the dish ahead of time. Then, when it is time to eat, just set it all out and let your guests do the work of putting together their own perfect tacos with the fixin’s you’ve provided. That allows for more time to focus on the guests and the game while serving great food. And that makes for a fantastioc Super Bowl party!

Lime Chicken Tacos (an Eric Heuser original recipe) Time Required: Prep: 10 min. Cook: 5-1/2 hours, Makes: 12 servings

Ingredients:

  • 1-1/2 pounds boneless, skinless chicken breasts
  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 jalapeno pepper, cut into chunks
  • 12 6-inch corn or flour tortillas, warmed
  • Sour cream, queso fresco or shredded cheddar cheese, shredded cabbage or lettuce, salsa, lime wedges, pickled onions, and avocado for serving

Directions:

Place the chicken in a 3-quart slow cooker. Combine the lime juice, chili powder, garlic, and salt in a small bowl. Pour it over the chicken.

Place the chicken in the crock pot and mix the lime juice with the seasonings.

Add the jalapeno pepper to the crock pot. Cover the pot and cook the chicken on low for 5-6 hours or until the chicken is tender.

Add the jalapeno to the pot.

Remove the chicken from the crock pot and allow it to cool slightly. Shred the meat with two forks and return it to the slow cooker.

Shred the chicken when it is cooked through.

Cover and cook the chicken on low for 30 minutes or until it is heated through.

Return the shredded chicken to the crock pot to absorb the juices.

Place the filling on tortillas and serve with sour cream, cheese, cabbage or lettuce, salsa, lime wedges, pickled onions, and avocado if desired.
