Turkey Leftovers! Turkey & Sweet Potato Soup

It’s the day after Thanksgiving and as always, there are leftovers from the feast. The sides to our turkey dinner get eaten pretty quickly since we are a side dish loving kind of family. The turkey is a different story. We tend to have quite a bit of it leftover every year. It takes some research and planning to use up all that leftover poultry. It’s a combination of too big a turkey for the number of people we typically have and everyone preferring the side dishes to the main attraction.

Part of my preparation for Thanksgiving each year includes finding recipes calling for cooked turkey among the ingredient list. Sure, some of the leftover meat is eaten in sandwiches in the days following the meal, but that’s boring to me. I’d rather discover a new recipe. And use our extended family as taste testers to a new dish! This year’s post Thanksgiving offering for leftover turkey is in the form of a soup.

Turkey & Sweet Potato Soup

Turkey & Sweet Potato Soup

Turkey & Sweet Potato Soup  (adapted from tasteofhome.com)                              Prep time: 20 minutes, Cook time: 30 minutes,  Serves 4

Ingredients

  • 2 medium sweet potatoes, peeled & cubedturkey-sweet-potato-sopup-1
  • 2 cups chicken broth or stock
  • 1 14-3/4 ounce can corn, drained
  • 1 tablespoon minced fresh sage or 1 teaspoon dried
  • 1/4 teaspoon pepper
  • 1 tablespoon cornstarch
  • 1 cup milk
  • 2 cups cubed cooked turkey breast

Directions

In a large saucepan, combine the potatoes with the broth. Bring it a boil then reduce the heat and cook, covered, for about 10-15 minutes, until the potatoes are tender.

Cook the sweet potatoes.

Cook the sweet potatoes.

Stir in the corn, sage, and pepper and heat the soup through.

Add in the corn & seasonings.

Mix the cornstarch into the milk, stirring until it is smooth, then stir the mixture into the soup.

Combine the cornstarch with the milk then add it into the soup.

Bring the soup to a boil, cooking and stirring for 1-2 minutes or until it has thickened. Stir in the turkey.

Add the turkey to the soup last.
