Halloween Happy Hour! Pumpkin Spice Cocktail

I love Halloween! Mainly because it is in autumn when the weather is pretty close to perfect for me and I get to eat lots of pumpkin goodies & chocolate. Did I mention the chocolate factor? I also look forward to the creative costumes, farm-based activities (hay rides, corn mazes & pumpkin picking, then carving) and the food associated with it, like pumpkin flavored treats & chocolate. (Hmm, said that already, didn’t I?!)

Being that it is the final Friday before Halloween and the start of the weekend, an autumn inspired cocktail to get into the “spirit” of things is in order! We are enjoying some spiced rum & pumpkin in our cocktail this weekend as we finish carving the pumpkins & putting up the animated decorations for the Trick-or-Treaters stopping by on Monday!

Pumpkin Spice Cocktail

Pumpkin Spice Cocktail (adapted from popsugar.com) Makes 1 drink

2 ounces spiced rum
2 tablespoons pumpkin puree
1 tablespoon Triple Sec
1 teaspoon simple syrup
Dash of Angostura bitters
pinch of pumpkin pie spice or dash of nutmeg, cinnamon & allspice

 

Directions:

Pour the spiced rum, pumpkin puree, Triple Sec, simple syrup, and bitters into a cocktail shaker filled with ice, and shake thoroughly. (For a smoother version, blend the ingredients with a wand blender before adding the ice to the shaker.) Strain the cocktail into an tumbler of ice and garnish with the spices to serve.
