Peaches on a Pizza?! Peach & Prosciutto Flatbread Pizzas

National Peach Month is almost at an end. That really saddens me. Ok, so maybe I’m a little over zealous about peaches. But I did not get near enough of them this year due to the winter & spring weather we had here in Connecticut. The mild winter allowed the region’s peach trees to start budding early. But then we got hit with a late freeze that killed off most of the local peach crop. Parts of the New Jersey peach crop was also affected. Thankfully, one local peach grower is traveling to Pennsylvania each week to bring back peaches, but the wonderful, juicy tree-ripened peaches I adore are not available in the quantities that I usually buy at this time of year.

We are making the most of the ones we are able to get and using them in new ways. With it being Friday Pizza Night, we are combining some of the few, but delicious peaches with our pizza. Peaches on pizza may seem weird, but the peaches give the pizza that hint of sweetness that is usually found in the sauce on a traditional pizza. And you can’t go wrong with prosciutto on a pizza, or on a peach!

Peach & Prosciutto Flatbread Pizzas

Peach & Prosciutto Flatbread Pizzas (adapted from TheYellowTable.com)

Total Time: 20 minutes  Prep time: 10 minutes  Serves 4

  • 4 naan flatbreads
  • 2 tablespoonss extra-virgin olive oil
  • 8 ounces fresh mozzarella, thinly sliced
  • 2 peaches, thinly sliced
  • 4 ounces prosciutto, torn into bite-size pieces
  • 1/2 cup thinly sliced fresh basil
  • salt & pepper to taste

Directions:

Preheat the oven to 450º. Place the flatbreads on two baking sheets and drizzle each with ½ tablespoon of olive oil. Top them with the mozzarella, then the peaches, prosciutto and half of the basil. Season the flatbreads with the salt and pepper.

Layer all the ingredients on the flatbreads.

Bake the flatbreads until the crust is crisp and golden and the cheese is melted, about 7-8 minutes. Remove them from the oven and sprinkle them with the remaining basil. Cut each pizza into quarters and serve immediately.peach prosciutto pizza (5)
