Tropical Christmas – Celebration Sparkler

About 6 weeks ago, Eric & I spent 8 days in Hawaii. It was a work related trip for Eric & a wonderful vacation for me. But it was a bit odd for us to see Christmas decorations and listen to Christmas music playing everywhere when the temperatures were in the 80s. That is not something we typically experience here in the northern half of North America! Except for this year. It hasn’t been quite that warm, but it has been above average for many parts of the US this December. Maybe the warmth followed us home from the Hawaiian Islands!

Amidst all the wonderful weather and beautiful scenery we enjoyed in Hawaii, there was also great, fresh food and new drinks to try. I came home with a list of dishes I want to recreate. The first item I duplicated was a cocktail. I had it at one of the hotel’s many restaurants. It uses St. Germain Liqueur, made from elderflowers gathered on the hillsides of the French Alps. This drink is tropical and refreshing and perfect for celebrating the Christmas & New Year’s holidays.

Celebration Sparkler (an original recipe from Linda J Heuser, inspired by the Sunset Sparkler Cocktail served at Tropics Bar & Grill, Hilton Hawaiian Village Waikiki Beach Resort)  Makes 1 cocktail.hawaiin sparkler

Ingredients:

  • 1 ounce coconut rum (like Malibu)
  • 1 ounce St. Germain Liqueur
  • 2-3 ounces sparkling wine (like Champagne or Prosecco)

In a tall Champagne flute, combine the coconut rum and elderflower liqueur. Add the sparkling wine and stir. Add a raspberry for garnish, if desired.
