Quick Or Company – Garlic Baked Shrimp

It is unusual to find a fast, main dish recipe that is impressive enough to serve company without shortcut ingredients. This is one of those rare recipes.

I am drawn to garlic recipes & shrimp recipes. When we lived in Chicagoland, the Kobe Steak House was my go-to restaurant on those infrequent occasions when I preferred going out to eat over having Eric cook. (Good thing he likes to cook!) I ALWAYS got the Hibachi Garlic Shrimp. Sometimes I would consider getting a different dish, but I never did. The extra large shrimp was stuffed with a very garlicky bread stuffing. I’m sure it was horribly bad for me, but the few times a year we went there, I splurged. We’ve tried to duplicate the recipe, but never quite got it. Until now. This recipe is a pretty good taste approximation of Kobe’s but with healthier ingredients! It is quick enough for a weeknight dinner & elegant enough for company.

Garlic Baked Shrimp

Garlic Baked Shrimp (adapted from realsimple.com)  Serves 4

  • 1 pound peeled, deveined medium or large shrimp
  • 4 cloves garlic, sliced
  • 2 tablespoons white wine
  • 1/4 cup softened butter
  • 1/4 cup panko bread crumbs
  • 2 tablespoons chopped parsley
  • salt & pepper

 

Directions:

Heat the oven to 425º. In a baking dish, combine the shrimp, garlic, white wine, ½ teaspoon salt and ¼ teaspoon pepper.

In a small bowl, combine the butter, bread crumbs and parsley.

The breadcrumbs & seasonings are held together with some very soft butter.

Sprinkle the breadcrumb mixture over the shrimp.

Top the shrimp with the breadcrumb mixture.

Bake the dish until the shrimp are opaque throughout, about 15 to 18 minutes.
